🥣 Mary’s Garden Gazpacho

Cool, zesty, and packed with summer veggies – this is the soup that sips like a salad!


💪 Why We Love It:

This cold, no-cook soup is refreshing, full of flavour, and bursting with nutrients — a go-to summer favourite with a twist of tarragon and your own personal touch.  Thanks to a friend Mary for sharing her recipe with me years ago. 


🛒 What’s In It + Why It’s Good For You

Ingredient Amount Benefit
🍅 Tomatoes 1½ cups High in lycopene (heart, skin, anti-cancer), vitamin C
🫑 Green Pepper ¾ cup Crunchy & sweet, immune support from vitamin C
🌿 Celery ¾ cup Natural anti-inflammatory, supports hydration
🥒 Cucumber ¾ cup Cooling, hydrating, helps flush toxins
🧅 Onion 3/8 cup Source of antioxidants, helps circulation
🌿 Parsley 3 tsp Detox herb, supports bone health (vitamin K)
🌱 Chives 1½ tsp Mild flavour, aids digestion
🧄 Garlic 1 clove Antibacterial, good for heart & immunity
🍃 Tarragon Vinegar 3 tbsp Adds savoury zing, aids digestion
🫒 Olive Oil 3 tbsp Healthy fats, supports skin and joints
🧂 Salt ½ tsp Balanced — not too much!
Black Pepper ¼ tsp Boosts absorption of nutrients
🍶 Worcestershire Sauce ¾ tsp Adds umami depth
🍅 Tomato Juice 3 cups Hydrating, rich in potassium and lycopene

👩🍳 How I Made It (Nicole’s Notes)

“The original recipe calls for peeled and finely chopped tomatoes — but I’ll be honest: I didn’t peel them! I just chopped everything finely, and used my little mini food processor to blend a few of the tomatoes and veggies. This helps bring everything together while keeping a rustic texture.  I also like to use Clamato Juice or Garden Cocktail as it has lots of flavour, but watch out for the salt intake if you are on a low salt diet. 💗”

Too watery? Just drain off excess cucumber juice after chopping.

Chunky or smooth? Totally your call! Some people love a full purée, others want texture. This version gives you both.

Full purée fans? That’s a version for another day. 😉


🕊️ Tarragon Vinegar Hack (Nicole's Tip)

“Don’t have tarragon vinegar? Take a large sprig of fresh tarragon, simmer it in vinegar for a few minutes, and let it cool. Instant gourmet infusion for soups, salads, or dressings!”


🧊 Serving Suggestions

Chill for at least 2–3 hours (overnight is best!)

Serve with a swirl of olive oil, a dollop of sour cream, or fresh herbs

Pair with crusty bread, crackers, or a summer salad
